Sweet and Sour Quinoa Bites


Perfect for lunch boxes or even as part of an evening meal, these sweet and sour quinoa balls will add some flavoursome fun to your weekly meal planning. Sugar free and super healthy, these little lollypop shaped bites will have your little ones loving dinner time this summer. What you’ll need:

1 tbsp oil
1 red onion finely chopped
2 garlic cloves finely chopped
1 tsp finely chopped ginger
2 tbsp white wine vinegar
1 tbsp low sodium soy sauce*
1 tbsp tomato paste
½ cup pineapple juice
½ cup water
½ cup quinoa (rinsed)
100g (approx. 2 rings) pineapple chopped into small pieces
1 beaten egg
