Funfetti Pancake Recipe

Put some fun back into pancake day and whip up some super colourful and seriously yummy funfetti pancakes.

Ingredients

282g of flour
2 teaspoons of baking powder
67g of caster sugar
90g of butter
1/2 teaspoon baking soda
1/4 teaspoon salt
2 large eggs
180g of buttermilk
2 teaspoons of vanilla extract
125g of rainbow sprinkles

Method

  1. Melt the butter and leave aside to cool
  2. Sift the flour, sugar, baking powder, baking soda, and salt together in a large bowl
  3. Whisk the eggs, buttermilk and vanilla in a separate bowl and add melted butter
  4. Combine wet and dry ingredients and whisk to combine the ingredients to form thick batter
  5. Fold in the rainbow sprinkles 
  6. Heat a large pan and add dollop of butter
  7. Once hot, drop about 1/4 cup of batter on the pan and cook until bubbles begin to form
  8. Flip and cook on the other side until golden brown
  9. Repeat until batter is used up
  10. Top with icing sugar and more sprinkles

Ingredients

45g rolled oats
1 medium banana
1 teaspoon of baking powder
52g milk
Pinch of salt
Cinnamon

Method

  1. Mash peeled banana using a fork
  2. Add oats, milk, baking powder, salt and cinnamon to banana mix and whisk together
  3. Heat a frying pan and add a dollop of butter. When heated, spoon out desired amount of mixture
  4. Cook until top of pancake starts to bubble, then turn it over and cook until golden brown
  5. Repeat until batter has been used up

1/4 teaspoon of baking soda
1/4 teaspoon of salt
1/2 cup of fat-free plain greek yogurt
1-2 tablespoons of milk
2 tablespoons of melted and cooled butter
1 egg

Method

  1. Combine flour, sugar, baking powder, baking soda, and salt in a  bowl and whisk
  2. Add greek yogurt, butter and beaten egg
  3. Add enough milk to make the batter stir-able
  4. Dollop small amounts of batter into the pan
  5. Cook until top of pancake starts to bubble, then turn it over and cook until golden brown
  6. Repeat until batter has been used up
  7. Use skewers to make pancakes into pops
  8. Use any toppings you wish
